New Recipe!
My roommate made this the other night and shared some with the rest of us. I was instantly obsessed. It is full of power foods and delicious amazing flavor. Super healthy (trust me, she knows her nutrition) and just a little bit is very filling.
Portobella Mushrooms and Beans Soup
1/2 t. olive oil
1 large onion, chopped
2 garlic cloves, chopped
Saute 2 minutes
Add:
2 large portobella mushroom caps, chopped
1/2 c. chicken stock
Cook 5 minutes more
Add:
1 large tomato or 3-4 roma tomatoes diced
1 can (15 oz) garbanzo beans with juice
Kale or Spinach, chopped (She prefers to use chopped zucchini and/or crookneck squash instead)
Cook for another 5-10 minutes
FYI this soup is more stuff than broth, in case you are concerned with its appearance as you cook. Bethany made it in a large fry pan with a lid. Just thought I'd share that because personally I picture a sauce pan when I hear "soup." Trust me, this is delicious. Please try it and tell me what you think!
